Creamy Tofu and Vegetable Pasta

Gather all ingredients and cook your pasta according to package instructions while you sauté the vegetables.

Cook the Pasta and Prepare Vegetables




In a pot, boil water and cook 100g of pasta according to the package instructions. In a skillet, heat some oil over medium heat and add diced carrot and zucchini. Cook for 5-7 minutes until slightly tender.
Add Tofu and Garlic


Crumble 150g of tofu and add it to the skillet along with minced garlic. Sauté for an additional 5 minutes until everything is well mixed and heated through.
Create the Creamy Sauce

Pour in 150ml of oat milk into the skillet, stirring everything together. Simmer for about 3 minutes until the sauce is creamy, then season with salt and pepper to taste.
Enjoy!
Serve the creamy pasta hot, garnished with fresh herbs or a sprinkle of nutritional yeast. This dish stores well in the fridge for 2-3 days; simply reheat before serving.
