Stuffed Bell Peppers
Preheat your oven to 190°C (375°F) and prepare the baking dish by lightly greasing it.
Ingredients:
Prepare the Filling
In a skillet, sauté the chopped onion until translucent. Add the ground beef and cook until browned. Mix in diced tomatoes and cooked rice.
Stuff the Peppers
Cut the tops off the bell peppers and remove seeds. Fill each pepper with the beef and rice mixture, then place them upright in the baking dish.
Bake the Peppers
Cover the dish with foil and bake for 30-35 minutes. Remove the foil and bake for an additional 10 minutes to allow the tops to brown.
Enjoy!
Serve the stuffed peppers hot, garnished with fresh herbs. They can be stored in the fridge for up to 3 days and can be reheated easily.
