Quick Coconut Cauliflower Mash
Start by gathering all your ingredients and equipment. Chop the cauliflower into florets for quicker cooking. Prepare a pot of boiling water or vegetable broth.
Ingredients:
Cook the Cauliflower
Bring a pot of water or vegetable broth to a boil. Add the cauliflower florets and cook for about 10 minutes until tender. During the last 2 minutes, add the peeled garlic cloves to the pot.
Mash and Season
Drain the cauliflower and garlic, then return them to the pot. Add coconut milk, salt, and pepper. Use a potato masher or immersion blender to mash until smooth and creamy. Adjust seasoning to taste.
Enjoy!
Serve your coconut cauliflower mash warm as a side dish. It pairs wonderfully with grilled chicken or fish. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently. A sprinkle of fresh herbs like cilantro or parsley can elevate the flavor further.
