Cabbage and Bean Stew
Gather your ingredients and a large pot. Prepare the vegetables by chopping the onion, garlic, and cabbage into bite-sized pieces.
Ingredients:
Sauté the vegetables
In a large pot, heat the olive oil over medium heat. Add chopped onions and garlic and sauté until onions are translucent. Then, add the chopped cabbage and continue to cook for about 5 minutes.
Combine ingredients and cook
Pour in the vegetable broth and add the canned beans. Stir well and bring the mixture to a simmer. Cover the pot and let it cook for about 20-25 minutes, allowing the flavors to meld.
Enjoy!
Serve hot, garnished with parsley or a drizzle of olive oil. Leftovers can be stored in an airtight container in the fridge for up to 3 days. This stew pairs well with crusty bread or over rice for a hearty meal.
