Cheesy Rice and Bell Pepper Bake

Preheat your oven to 190°C (375°F) to ensure it’s hot and ready for baking. Prepare all the ingredients before you start cooking. Gather your rice, bell pepper, cheese, egg, sunflower oil, and coconut milk. Cooking can be fun and rewarding when you're prepared!
Ingredients:

Prepare the Rice

Wash 100 grams of rice and cook it according to package instructions, using a pinch of salt. This process will take about 15 minutes including the time for bringing water to a boil, stirring, and removing it from heat.
Chop the Bell Pepper

Wash and chop 100 grams of bell pepper into small pieces. This will create a nice texture for our bake. It will take about 2 minutes to wash 30 seconds and chop for 90 seconds.
Mix Ingredients

In a bowl, mix the cooked rice, chopped bell pepper, 100 ml of coconut milk, and 50 grams of shredded cheese. Stir well to combine everything smoothly. This should take about 4 minutes including the mixing process and gathering the ingredients.
Add Egg and Assemble

Crack 1 egg into the bowl with the rice mixture and mix well. Then, pour the entire mixture into a greased baking dish. This step will take close to 3 minutes including preparation before the egg is added, and cleaning hands.
Bake the Dish
Place the baking dish in the preheated oven and bake for 30 minutes until the top is golden and bubbly. Check halfway through to ensure it cooks evenly; this waiting time is crucial for perfect results.
Enjoy!
To serve, garnish with fresh herbs like parsley or basil. Pair the bake with a side salad for a refreshing touch. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving for best results.
